Cranberry walnut bread

Every year around this time I pull out my mothers cranberry bread recipe and make a few loaves for Thanksgiving and or Christmas. This bread is one of the few food memories I have as a child. In all honesty it is rather peculiar to me how little I actually remember about the dinner table in my house. I can’t think of a time when we didn’t have plenty of food although i do remember the food stamps and mammoth logs of “government” cheese. Maybe everything we had was just simple or something. This bread and a zucchini bread, along with my mom’s lasagna and brothers mac and cheese are the only foods I recall. I do however fondly recall them.

Mom’s Cranberry Walnut Bread

2 cups All Purpose Flour
1 cup Brown Sugar
2 tsp. Baking Powder
1/2 tsp Baking Soda
1/2 tsp. Salt
3/4 cup Orange Juice
1 Egg Slightly Beaten
2 Tbsp Melted Butted
1 cup Coarsely Chopped Cranberries
1/4 -1/2 cup Chopped Walnuts

Mix all dry ingredients (except nuts and berries) I a medium bowl and set aside. In a second medium bowl mix together the orange juice, melted butter, and egg. Slowly add to dry mixture until the batter is moistened throughout. Stir in the cranberries and nuts until they are well mixed.

Pour batter into a well greased 9×5 loaf pan.

Bake at 325 degrees for 55-60 minutes or until toothpick tests clean. The loaf will crack on top my mom always tried to avoid this by putting a piece of tin oil on top with about 10 minutes left. I’ve never done this though and not sure why she did.
